I love the Fall! I've been especially happy that it actually feels like Fall around here these days....it's made me actually want to cook. I also love any kind of squash/sweet potato in the Fall. Oh, the taste, the smell, the colors!!! I could go on and on.
So, with a good deal on Zucchini I had a little fun in the kitchen this fine evening!
Zucchini Soup and Bread it was!!! I love that the twenty five neighborhood friends we had running in and out and everywhere kept asking what smelled so good. There's nothing that can make my mommy heart feel better than having busy, happy kids while I'm preparing a healthy meal for us all to sit down to together!
This one wanted more and more... :)
This one actually ate every bite and kept saying that I could make Zucchini Soup any time I wanted to.
She's saying it's your turn....
Zucchini Soup
3 cups sliced zucchini
1/2 cup water
1 T. minced onion
1 tsp. seasoned salt
1/2 tsp. parsley flakes
2 tsp. chicken soup base or 2 bouillon cubes
2 T. butter
2 T. flour
1/8 tsp. white pepper
1 1/2 cup milk
Combine zucchini, water, onion, seasoned salt, parsley, and 1 tsp. soup base. Cook until zucchini is tender and most of water has evaporated. Mash or puree zucchini and set aside. In saucepan melt butter; blend in flour and rest of soup base and pepper. Add milk and simmer until thickened. Stir in pureed veggies.
