Rainbow Cupcakes











Spencer asked me to make these nifty treats for his "early birthday" right before school got out. It was a special day when I took them because he was also invited to attend the "Bulldogs Best" lunch with the principal. This was a huge honor. Only the best of the best get to do this; one from each grade go each quarter!









All you have to do is make a white cake mix, pour the batter into 5 or 6 different bowls, then add food coloring to each one for the different colors. You put a spoonful of one color at a time in the cupcake tin and carefully layer until each cup is 3/4 full. Place in the oven. Surprisingly the colors don't mix!

Very cool. Pair them with 7-layer jell-o and you'll have a whole rainbow meal!

I KNEW I remembered these from your blog. Making them for Millie's first friend party tomorrow! Wish me luck. (She'll be 4 next week).
