I've been experimenting with our Shelf Reliance food again. I thought I would share this great recipe I came up with. Our whole family loved it--you know it's good when Spencer was gobbling it up too!!!!
Pastry for 9-inch Pie (not baked yet)
8 slices bacon, crispy & crumbled
or THRIVE Bacon TVP
1 cup shredded cheese (Swiss or cheddar)
1/3 cup THRIVE Onion
1/2 cup THRIVE Mixed Bell Peppers
1/2 cup THRIVE FD Spinach
1/2 cup THRIVE FD Mushrooms
4 large eggs
or THRIVE Egg Powder
2 cups whipping (heavy) cream
1/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. ground red pepper (cayenne)
Heat oven to 425 degrees. Prepare pastry and put on bottom of quiche dish or pie plate (9x1 1/2 inches).
Sprinkle bacon, cheese, onion, Bell Peppers, Spinach, Mushrooms in pastry-lined dish. Beat eggs slightly; beat in remaining ingredients. Pour into quiche dish. Bake 15 minutes.
Reduce temperature to 300 degrees. Bake about 30 minutes longer or until knife inserted in center comes out clean. Let stand 10 minutes before cutting.
Pastry:
You can just buy a pastry already made for you in the freezer section in the grocery store, or take a few extra minutes to do this:
1/3 cup plus 1 T. shortening
1 cup flour
1/4 tsp. salt
2-3 T. cold water
Cut shortening into flour and salt, using pastry cutter or two knives, until particles are size of coarse crumbs. Sprinkle with cold water.
Gather pastry into a ball. Shape into flattened round on lightly floured pastry mat/parchment paper. Roll into circle. Flip over into quiche dish.
